Salsify (Tragopogon porrifolius)

Description: Salsify (Tragopogon porrifolius), also known as oyster plant due to its subtly oyster-flavored roots, is a biennial native to the Mediterranean region and thrives in USDA zones 5-9. Valued for its edible roots and nutrient-rich properties, it supports digestive health and provides essential vitamins. Ecologically, it attracts pollinators like bees when in bloom, although it is not typically grown as a houseplant due to its size and space requirements.

Color: Salsify features narrow, grass-like green foliage and purple, star-shaped flowers that mature into large, fluffy seed heads similar to dandelions.

Seed Stratification and Sowing: Salsify seeds do not require stratification. Direct sow in early spring or late summer; plant seeds 1/2 inch deep in well-draining soil with consistent moisture. Germination typically occurs within 10-14 days.

Growing Habits and Requirements: Salsify grows to about 2-3 feet tall and prefers full sun with well-draining, loamy soil. It is relatively low-maintenance and tolerates moderate drought but thrives best with regular watering.
